The Recession Hits…

The reality of the recession starts to bite and Cillian Fahey, not long back in Ireland, has to think creatively. Tired of being served foreign macro beers, he has the idea that he could start a brewery making Irish lagers…the only catch was that the brewery idea came about 3 weeks after he had signed a lease on an office in Paris for a different business. Brewing would have to wait a bit longer.

Home Brewing In The Kitchen

Cillian starts sending money back to Ireland so his brother, Nick Fahey could start buying home brewing equipment. Home brewing starts in the kitchen of the family home.

Kicked Out Of The Kitchen

Kicked out of the kitchen on grounds of making a mess and production is moved to a shed in the back garden and a commercial fridge is purchased.

Home brewing continues for the next few years with increasing success although never selling commercially.

A Family Affair

In 2015 the entire family decides to make a real go at it and build a brewery as a joint family project.

Equipment Is Ordered

Orders are placed for all the tanks and equipment. Large enough that we could contract brew for others while we built up our own business.

Recipe Development Starts

Still staying true to the original plan, the main focus was lager beers but with new beer styles also being brought in.
Limited Release Beers

The first equipment starts arriving and commissioning takes us through to the end of 2017 while releasing some limited release beers.
Irish Craft Beer Festival

Larkin’s hit the market at the Irish Craft Beer Festival at the RDS with three lagers, a Kölsch, and a sweet stout. Boosted by great feedback, Larkin’s continue with commissioning and prepare for a full launch in early 2018.

Tasting Note:A refreshing light pale ale with low bitterness. Using a malt base of Wheat and Vienna Malt it’s then 100% whirlpool hopped with Lemondrop and Cascade before being dry-hopped again using the same varieties.

Galaxy Quest

Style:Session IPA
Format:440ml Can
Tasting Note:A super juicy IPA, hopped with a generoushelping of Galaxy hops. Lychee, passionfruit, and peach aroma follow through to the palette where citrus and melon notes join in to make a thoroughly enjoyable beer. All this delivered with a silky mouth feel from the wheat and barley grain base.

Summer Session Saison

Style:Summer Session Saison
Format:440ml Can
Tasting Note:Session Saison with low to mid bitterness from Huell Melon and Mandarina Bavaria which give an overt fruitiness with notes of orange zest, cantaloupe melon, and strawberry.. and all this one a super dry malt base. A session beer.
